Gingerbread Christmas tree…

Gingerbread is synonymous with Christmas and this stacked gingerbread tree changes it up a bit if you usually make a gingerbread house!

I used a set of cookie cutters, but you could just as easily print out a set of stars in varying sizes and cut them out of the gingerbread with a knife. Here’s the recipe!

Dough Ingredients
250 g unsalted butter
1 cup of honey
1 cup brown sugar
5 cups plain flour
1 teaspoon bicarbonate soda
3 teaspoon powdered ginger
1 teaspoon nutmeg
1 teaspoon nutmeg
1 teaspoon ground cinnamon
1 teaspoon salt
4 egg yolks

Method
1) Melt butter, sugar and honey in a saucepan, stirring to mix until smooth. (TIP- spray olive oil in the cup before measuring out the honey- it will slide right out!). Allow the mixture to cool, then stir in egg yolks
2) Sift flour, bicarb and spices together in a large mixing bowl
3) Gradually add the mixtures together to form a dough, kneading with your hands.
4) When the dough has formed, refrigerate for 15 minutes before rolling
5) Roll out dough on a floured surface, to approximately 6mm thick and cut shapes.
6) Place in a 180 degrees Celsius oven for 13-15 minutes or until lightly brown.
7) Remove from oven and let cool before icing.

Icing ingredients
3 cups pure icing sugar, sifted
4 egg whites left over from dough
1 teaspoon cream of tartar
sprinkles and decorations

Method
Beat egg whites, icing sugar and cream of tartar together until smooth.
Use quickly as it sets like glue!

Ice each star then stack together to form a tree, alternating the orientation to create a layered tree-like effect.
Decorate as desired – enjoy!
