Butterflied lamb on the barbeque


You’ll never lamb alone on Australia Day!

Try this recipe or simply throw some lamb chops on the barbie to celebrate in true Aussie style.
• One whole leg of lamb, bone removed
• Olive oil
• Garlic
• Your choice of spices (or use a ready made spice pack from Complete Ingredients)
• Salt and pepper
• Sprigs of rosemary or saltbush
Butterfly your lamb leg by removing the bone and cutting down the centre to flay out in a butterfly shape (or ask your butcher to do this for you).
Marinate the meat with salt, pepper and olive oil and whatever spices you choose, ideally overnight.
Cook on a hotplate over an open fire. Burn rosemary or saltbush sprigs on the fire to add a subtle flavour.
